For the uninitiated, mochi is a traditional Japanese rice cake whose modern, ice-cream-filled interpretations have taken the world by storm. For pastry chef and owner Jessica Dorra, it’s the ultimate way of eating ice cream: a textural harmony of chewy steamed rice dough and smooth ice cream, finished with small delights that draw from her pastry background. This Thursday, Mochi Time kicks off the start of the ice cream season at Torvehallerne with flavors that span from the familiar to the more adventurous – from vanilla and mango to black sesame and dulce de leche. Here, each piece of mochi is an expression of the relationship between flavor and texture, rooted in a devout appreciation for Japanese tradition.

WHAT YOU GET

Pick any four mochis with toppings at Mochi Time in Torvehallerne. Choose from a rotating selection of made-from-scratch mochi with toppings. Taste Dulce de Leche mochi, with a caramel-infused rice dough folded around a center of dulce de leche ice cream, topped with caramel sauce and crunchy hazelnuts. Enjoy Pistachio mochi, a nutty bite of roasted pistachio ice cream finished with a white chocolate and crushed pistachio wafer. Get Yuzu mochi, with a smooth blueberry and yuzu sorbet encased in blueberry rice dough, finished with berry gel and fresh berries. Indulge in Black Sesame mochi, a deeply balanced bite of black sesame ice cream enriched with handmade sesame paste. Delight in Coconut mochi with a vegan coconut base topped with coconut cream and fresh raspberry. Try meringue-topped Matcha mochi, Vanilla mochi with cream and a dark cacao cookie topper, and more.

Opened in the summer of 2023, Mochi Time is the amalgamation of Argentinian pastry chef Jessica Dorra’s years of restaurant experience and love of Japanese gastronomy. Together with her husband, Leonardo Tardito, she honors the craft of mochi, pounded and steamed sweet rice dough originating from Japan and cherished around the world for its unique texture and flavor-carrying ability. Jessica and Leo have created their own take on the Japanese snack, leading workshops in Tokyo and Copenhagen to share their knowledge. At Mochi Time, tender rice dough envelopes silky ice cream and fruit sorbet, finished with toppings like sesame brandy snaps and pistachio chocolate wafers – all made by hand in Copenhagen with 100% natural ingredients.
