9-course menu at Ark in City Center — Michelin Green Star cooking shaped by Japanese technique and Copenhagen’s wild pantry
At Ark, chef Brett Lavender pushes plants far beyond their familiar limits. Ingredients foraged from Copenhagen’s wild edges or grown on the restaurant’s own urban farm meet Japanese technique, fire, fermentation, and umami across nine boundary-breaking courses.
Sweet-corn chawanmushi draws depth from kombu, shiitake, and burnt lemon. Confit lion’s mane is charred by the flame and served with brioche laminated with miso butter. A blini brings pickled pear gelée and dill emulsion, while sautéed samphire is dusted with togarashi. For dessert, lovage ice cream meets fresh apple and wasabi flowers before berries with hibiscus reduction and verbena bring the menu to a close.
