You won’t find raclette and fondue like this anywhere else in Denmark. At MELT, French couple Aurélie and Yvan bring award-winning Alpine cheeses and one of France’s great dining rituals to Carlsberg Byen.
At the table, a quarter-wheel oven slowly melts cheese from the top. Scrape it generously over Danish potatoes, a selection of charcuterie from southwest France, cornichons, and salad. Or dip bread into Savoyarde fondue built from molten Comté, Beaufort, and Abondance. Around it: pork rillettes, bubbling gratinéed Saint-Marcellin, bottles from Jura, Sancerre, and Savoy to cut through the richness.
